There are many different types of rice. The most well-known rice variant is probably, long-grain white rice. Besides white rice, there is also brown and black rice. Brown rice is gaining popularity, because it is considered healthier. Black rice is also known as forbidden rice or purple rice, because it was the rice enjoyed by Chinese emperors and this type of rice is usually used in sweet rice dishes. In general there are 3 sizes
Long grain: a classification for rice that is at least three times as long as it is wide. E.g. basmati and Jasmine, popular in Chinese and Thai cuisine. After cooking this rice type tend to remain intact.
Medium grain: is less than three times as long as it is wide. E.g. Risotto rice.
Short grain: is less than twice as long as it is wide. E.g. sushi rice.
